National Ukrainian soup “Borsh” is famous around the world. It’s a great diet dish that will improve your metabolism and when eaten regularly – help you loose weight and become healthier. This soup has been served in Ukrainian families for hundreds of years. It is a tradition to serve it with 1 table spoon of sour cream, half onion and piece of bread. In 18 – 19 centuries when searching for job, people needed no resume – the interview was being held at the lunch able and an employer used to judge his future employee by how much Borsh he eats.
They used to believe that a good worker will eat a lot of Borsh. This recipe was by-passed to me by my grandmother and served me well for over 15 years. From my own experience I can reassure you that you will start loosing weight rapidly once you replace your every-day-lunch with a plate of this tasty Borsh. For this recipe I recommend you to use 7.6 L./ 8 Qt pot.
1) First you will need to make chicken stock. Chicken, 1 large onion (cut in 4 pieces) and 1 large carrot will need to boil for at least 4 – 5hours on small heat. (after that onion and carrot will need to be removed from the soup and chicken separated from bones and cut in large pieces)

2) When the stock is made, peal beets and cut them in small pieces and throw them in the pot. Do the same with the rest of onion and carrots.

3) In 20 mins it’s time for potatoes. Peel them, cut them in medium seized pieces and throw in the pot.

4) Start cutting cabbage once you’re done with potatoes. Remove first 2 layers of cabbage and cut the rest.

5) Now add tomato paste.

6) In 20 mins your borsh is ready and the final touch will be adding cabbage. Make sure that it doesn’t boil for more than 3mins as then it will just fall apart. Serve this national Ukrainian diet soup with 1 tablespoon of sour cream. Bonne Appetite!
