Bliny is a very popular dish in all Eastern Europe. The recipe I’m offering you is the most simple one. It can be served for breakfast with coffee or tea. Or it can be a great desert for any other meal! If you are a red or black caviar fan, you will truly enjoy a teaspoon of caviar served with Bliny (but in this case you will not need to butter or sugar them!) Good Luck!
Things You’ll Need:
1.3 cups of flour
1 cup of milk
1 cup of water
2 eggs
1 teaspoon of sugar
2 tablespoons of melted butter
1 tablespoon of sour cream
Step 1
Start mixing eggs, sugar and salt (up to your taste) until it turns into creamy substance.
Step 2
Add milk, water, butter and sour cream.
Step 3
Mix it all together
Step 4
Add flour and mix it all together until it turns into even smooth substance. Make sure that all flour pieces have resolved.
Step 5
Prepare a fry pan (medium seize). Set it on medium fire, butter it very well.
Step 6
After the butter on your fry pan is melted and the pan is well buttered (including the sides of the pan), take a large soup spoon, dip it in the liquid dough and pure it on the pan.

And this very process is the hardest step and the main trick of the recipe! When you are ready to pure it and your soup spoon is full of the substance, take the fry pan in your hand and start pouring. Right when the substance touches the pan – start turning the pan clock-wise. This is the hardest part because the dough has to be even on the button of the pan.

Now the hardest part is finished! You can relax and watch your first Blyn fry. It usually takes 1 – 2 minutes for one side of the Blyn to be done. Now you need to flip it on the other side!
Step 9
Take wooden spatula (with thin ends) and carefully separate sides of your first Blyn from the pan. Make sure they are not fried to the bottom! Then carefully move the spatula to the very center of the Blyn and with your one hand and spatula underneath the blyn flip it on the other side.

It will only take another minute or two for your first Blyn to be done!

Now you can put it on a large plate and start making another one.
Step 12
While your next Blyn is being cooked, make sure you butter and sugar the first one. Just put half teaspoon of butter on it and spread a little bit of sugar. Butter will start melting immediately and Blyn is hot! Also, to make it easier for you – you can melt butter in a separate plate, take 2 – 3 feathers (large chicken feathers, but make sure they are very well cleaned!), deep them into the butter and it will make it much easier and quicker to butter your each Blyn!

In 30 – 40 minutes you will be all done and set for a wonderful delicious meal!

Tips & Warnings
Make sure you have enough time! You will have to devote these 30 – 40 minutes to your Bliny as the whole process will be very quick! While your next Blyn will be on the pan, you will be buttering and sugaring your previous one. Keep putting your next Blyn on the previous one! So, it will look like a tall Blyn tower. Be prepared that your first Blyn will not turn out as you expected! In Ukraine we have a proverb: “First blyn is the worst one” You don’t have to butter your pan after each Blyn! Butter it only at the very beginning.
